Aunt Pat’s Lazy Pierogi

A great meal on a cool, fall day! 

1 (2 lb) jar sauerkraut with caraway seeds
1 cup butter, melted (I cut this to 1/2 cup and thought it was just as good)
1 large onion, chopped
1/2 tsp. dried parsley
2 T. packed brown sugar
black pepper
1 1 lb. bag of Kluski noodles

Rinse sauerkraut under cold water and drain well. Melt butter in Dutch oven. Brown onion lightly, add sauerkraut, parsley, brown sugar and pepper to taste. Cook over low heat for 10 to 15 minutes.

Meanwhile, boil noodles according to package directions. Drain and add to sauerkraut mixture. Mix well. Spoon into ovenproof casserole dish. Cover and bake in preheated 350 oven for 20 – 30 minutes.

Note – To make a full meal, stir in 1 lb. smoked polish sausage – sliced thin. (I add the skinless sausage). Serves 6-8
